There are a bunch of backup apps in the market that will backup your data but I find it's easier to take any information you have stored on your SD card, just copy to your computer, keeping the same folder structure. Make sure you copy the hidden files as well.
If you register on Appbrain and sync with your phone, when you get the new phone, you just sync back and reinstall your apps and then copy the data back. You'll have to reset your home screens and widgets, but everything will be there.
To backup everything including apps, you'll have to root.
