RAM issues?

I found that my phone, and my friend's HTC Evo 3D, has 425MB of RAM being taken up by the system? Any one know how to clear it up a bit, I mean, the device has 1GB of RAM, but only 375MB usable?

I pretty much bought this phone to test the game Branches (Terraria Port), which I'm beta'ing for a developer, and it was supposed to work with 1GB of RAM (upgrading from my Triumph), but it pretty much has the exact same available RAM.

I mean, I'm fine with shutting down a few system processes for a while, but is it possible?
 
From my understanding, I always assumed the more RAM android actually uses, the better the phone actually performs. It's one of those counter-intuitive types of logic, you think the more freed up RAM would be better but actually its not the case. Someone please correct me if I am wrong though
