Am I dreaming or did this phone used to have a ram management screen where it would tell you how much ram is being used and how much is left and also have a 'clear' button that when you pressed it a notification would come up saying '(?) processes closed'. Im sure there used to be such a screen to close your ram down but I cant seem to find it now.

No. There's plenty of apps that do that but it has the stock android task killer where you hit your recent apps button and swipe away.

1 GB, not much now a days but then again the phone costs less than $200
