When you uninstall an app that has used data, the amount of data that it used gets lumped into Removed Apps. The amount is cumulative.If you had two apps that each used 50MB of data you would normally see both apps listed. If you uninstalled both apps, they would disappear from the data usage listing and you would have a new listing for Removed Apps showing 100MB.
