Root Removing all mobile data (WiFi only)

I don't really plan on using this phone for anything phone/data related so what I'm wondering is what is everything I'd have to remove to get rid of everything "phone" & Sprint related.

BTW... don't try to uninstall the phone/dialer, or contacts apps... it will cause crashing. You should be able to freeze them though.
