How do I remove files and apps from a note 10.1 2014 edition?

To remove apps, either go to Settings .. Apps .. All and go through the apps hitting the Uninstall button or go to the Play Store, select My Apps from the menu, tap each app in turn and hit the uninstall button.

To remove files, get a file manager from the Play Store - I use a free one from called File Manager.
