Root Restore what exactly after rom?

using titanium backup, what do i wanna restore. all apps/data, missing apps/data, missing apps/all system data..
ive been looking and all i could find was, one thing saying restore apps doesnt say with or without data. and one saying, Restore all system, apps, and data - but avoid the red. it just seems wrong to install a rom that takes blur out and then restore a system full of blur. thanks
 
I just choose restore all apps. Then I go back and restore app data individually if I need to later. It usually restored apps and data though. The only thing that never works is my Handcent SMS app, it restores the app and user settings, but not the messages.

its bc handcent just reads from the messages and does not actually store them within the app

not too scientific but just so u know :)
