If I root my device, would I still recieve system updates?
 
yes. but you do not need to root to turn off auto updates
I want to de-bloat my phone. Currently, it has so many applications which I don't even use. Is there another way to de-bloat my phone other than root?
Device: Oppo A12 CPH2083
OS: ColorOS 6.1.2 (Android 9)

there is no development community behind your phone, unfortunately. so if the bootloader is unlocked then you can use a fastboot command to unlock the bootloader. once that is done then you can use magisk to give you root.

personally i would not root the device mainly because, the main root tool used on rooted devices, a custom recovery, is not available for your phone. a custom recovery can make nandroid backups which is a complete backup of your phone. this is needed in case when you "de-bloat" your phone, if you delete the wrong thing, you can easily soft brick your phone. but if you have a nandroid backup, you can easily restore back before you made the error.

so if you still plan to root, then i would be extra carefully on what you delete. deleting a system file can create serious issues and you will not have a backup to restore to.

FYI back in the day, most Oppo phones with Color OS(like Find7) were ideal devices for rooting, installing custom ROMs, etc. And this was fully supported by Oppo via their own forums and dev community. However they closed all that down. And these days Oppo devices with Color OS are very locked down, and tend to be extremely difficult, or impossible to root,

So now with Oppo(and Vivo) it's..
no devs = no fun
