Root Rooted, Now what

So i have rooted my desire as i wanted to get some space. i tried deleting the stock app (through app manager) but it wouldnt work or move?? how do i do it?
Also what is a custom rom used for??

you need to be s-off to remove system apps or by using adb if your not. Or failing that remove it from the rom zip before flashing the rom. (probably lost you haven't i?)

Custom roms are what their name suggests, roms made by developers with different tweaks, etc added.
