Rooting is modifying your phone's software in order to gain administrator access (in Windows parlance). This allows you to remove unwanted pre-installed apps and install custom software (if available).
Unrooting is just undoing that process. This is normally done by reloading the manufacturer's stock software.
The procedures for rooting a phone depend on which phone you have, sometimes which software version your phone is running. It's important to get this right and only use software and methods that are known to work on your specific phone model.
