If I root my phone will all my previously install apps still be there? It is my old phone so I want to give it a try.

Everything should be there unless you format your phone or do a factory reset.

It depends on the phone. Most of the time it doesn't, but sometimes the procedure to do so will require flashing a new image or in the case of a nexus device, unlock the bootloader (which wipes the device clean).
