It gives you greater control over what is on the phone - e.g. the ability to delete bloatware - and is the first step required in order to replace the ROM with one of the many custom versions available. On some phones, it can allow you to circumvent some of the phone's limitations.

However, if you do root your phone, do heed the warnings and do not just start deleting anything you see in /system. A lot of stuff there is needed for your phone to operate properly.
