I use the s-note app extensively also, primarily as my daily diary at work. I don't use the Text function, or the Handwriting-to-Text function; I just let my handwriting be what it is. I create one new document for every day and name them so that they will sort by date (ie. yyyy mm dd). At the end of the day I save the document and upload it as a jpg to Microsoft SkyDrive. SkyDrive allows you to view the jpgs very quickly, just like you would look at any picture. With one click you can move from one jpg to the next, and you see the entire page all at once. It makes it very easy to scan through a month's worth of diary notes in about 2 minutes. And SkyDrive allows me to view my notes from any desktop or from my tablet, so I don't have to use up my device's tablet to store all my old notes.
