There are a number of apps in Play Store that can do this for you, such as My Backup and Helium, to name but two.

Hello Ironass, as i stated i dont want any app knowing all my business; contacts, browsing, syncing, gps etc, both My Back Up and Helium want to know everything, can i just transfer sms and photos to an sd card and then reinstall back to the original apps that came on the phone ref Gallery and Messaging once the update to jb is complete -sorry for being a pain.

You can with photos as they are accessible, unlike SMS folders in System storage, which are not unless you first root your phone or use one of the app's mentioned previously.***

You could, of course, just update without wiping your phone first as the updates are not supposed to require a wipe or Factory reset... although they often do. See #1.2 of the Jelly Bean update - Dummies Guide and Firmware update problems... what you can do!

*** The app's mentioned only require those permissions if you wish to use cloud backup. You can just copy and store on your SD card and then copy to your computer... thus keeping all backups local.
