If it's been talked about here, I can't find it! Pre-ICS, my saved email files/attachments saved in a default location of MESSAGES. Now Post-ICS, it is saved under DOWNLOADS. Is there a way to change the default email saved file location?
What email app are you using? I know with k9 mail you can switch to either internal or external sd-card to store emails. As far as stock I don't use it but would bet that you won't be able to.

I was afraid of that. I'm using the stock program. I wasn't a fan of the K9 for various reasons. I have been searching but can't find a place where I can change it without programing.
You might look in the Play store for an app to help you do it manually. I used to use one for GMail back in the day that allowed me to save attachments wherever I wanted, called tAttachAPK 9worked for more than just APKs, IIRC).
