Security challenge

I live in a jurisdiction where police have the discretion to take all of the information from your phone during a routine traffic stop. All of your personal information, stored emails, gps data, everything. Does anyone know of a way to defeat this?
Cellebrite - Mobile Forensics and Data transfer solutions - UFED Ultimate

While I doubt its claim of real-time decryption I would like to know what steps I can take to protect my information.

I hope I found the right forum, googling encryption led to apps not reviewed by experts and forum posts or articles that were several years out of date.

I've read about this before. I don't think there is a way to be the cellebrite, however I don't understand how they can legally do this without your consent.

Well they really should be required to get a warrant. Its the only constitutional way. In most jurisdictions in America they treat a cellphone as a container and can thus can go through your data in any search incident to arrest if it is on your person or within reach in the car. In a few places they go overboard and can do it on traffic stops. It sucks, but considering the Supreme court didn't overturn it with their recent case and legislatures haven't had much success at banning it chances are nothing will change in the near future.

Just doing some more light googling there is a product out there called whispercore that offers device level encryption on the Nexus s. Not sure how secure it actually is, but I don't have a nexus s anyways.
