What would you want to get out of rooting your device?

I really don't know what I can do with it being rooted except freeze apps

Rooting will allow you to freeze/uninstall bloatware, do complete system backups, run custom ROMs and kernels, and fine tune your phone to a greater degree than you can running it stock.
