My Galaxy S2 Skyrocket from AT&T randomly looses signal and won't come back untill I restart my phone. Even if I am not moving and have full signal with 4G LTE it will still randomly not have any service.

It could be that your SIM card is starting to fail - at least I had a card fail the other year, and that was how it started.
If you have another SIM & handset, swap them and see whether the S2 still loses signal.
