There are two Facebooks on the Desire - Facebook & Facebook for HTC Sense.
Facebook - All programs icon > Facebook > Menu > (depending on which screen you were viewing last) Home > Menu > Logout - Or just simply click on menu and then Logout if you were all ready on the Home Screen.
Facebook for HTC Sense - All programs > Settings > Accounts & sync > Facebook for HTC Sense > Remove Account
