Help Simple root questions

So I've looked over a lot of websites and videos and none seem to answer this.

Note, I am a complete android noob

1. I don't want to install a custom ROM or whatever they're called, but when you root the device is there any change in performance at all? Also does it make it unstable in any way? I know you can brick the phone if you root it wrong, but if you root it correctly, is there any way to brick it accidentally afterwards?

2. I have an S3 and want to remove all this bloatware, I know I can do it from Titanium Backup, but if I try and remove one will it crash the phone? Is there a list of bloatware that I can and cannot remove?

I only want to root to install an anti theft app into the root of the phone (i think its called?) so that a wipe won't affect it. And of course so I can remove bloatware.

Also, is there a way to backup and restore your phone remotely? from a PC for example? Assuming the device is fine and nothing has happened to it.
 
Depending on the method used for rooting you can brick your device.

Root itself only gives you "admin" access and doesn't make any other changes, but you will have access to make changes for performance changes and changes that can be harmful if you're not careful.

Since you're not interested in using a custom ROM I suggest not removing any of the pre-installed software because doing so will prevent you from getting OTA updates.

Also, if I root then do an official update to 4.3 (for example), will it unroot or be any different from updating with an unrooted phone?

Welcome to the forums!!!! :D

Root by itself is simply having administrator rights on your device. You wont notice any difference by having root except that you'll have a new SuperUser app in your app drawer.

Its the abilities you gain by being rooted that can give you performance increases, longer battery life, new features, ect.

As for your backup question... You can create a nandroid which will completely back up your phone and all of its data. In the event something goes wrong, as long as you can get to your recovery you can restore the nandroid and its like nothing ever happened.

On the topic of updates... You don't want to take OTA (over the air) updates on a rooted device. However, you can just flash the updated stock rooted ROM through recovery. You won't need to lose your data either.
