Simply adding contacts

(I tried to find a thread on this but they all seem to be about syncing, so:)

How can I just add a number to my phone attached to a name, and then have that in my phone? Phones used to be able to handle this.

Like, let's say I want to have "The Pizza Place" in my phone for when I want to order a pizza. I don't need their email. I don't want to be their friend. I don't need their URL. I don't want to sync it with my linkedin or my facebook or my gmail or my twitter or my friendster or anything. I want to put in the number, and attach a name to it. This is how I want to use my phone.

Now when I try this, it disappears. In fact, I can no longer find a very important number that I used to have in my phone.

I get that some people like being super organized and having their droid constantly synching to their gmail and their macbook and their outlook and their facebook and their toaster and everything. That's cool for them. I just want my damn phone to remember when I put in a damn number. Is there a setting I can pick? How can I recover a number that has disappeared?

To repeat: Unlike a lot of people, I don't want to create a master spreadsheet google gmail synchronized directory for all of my contacts. I just don't want to have to memorize the number for the Pizza Place, and I don't want my mother****ing numbers to be disappearing without my consent.

Well, I just open dialler, type the number, press add to contacts then (+), put the name in and hit save..... If you do this, the contact disappears? Or did you miss a step? And you did not mention what phone you have. Some phones may have a setting to only show Phone Contacts for example. But maybe you saved it to Google Contacts on your phone instead which is set to not show for example?
