Mat I please know how I can LOG into SKYPE with a different USER ID

After LOG OFF, when I retart SKYPE it loads the default USER ID
 
Tap your icon in the upper right corner, then the 3 dot menu - from there you can sign out and also go to settings to turn off the auto sign in.
