So if i turn off Sense UI.

You gain the ability to trick your friends into thinking you have the tmobile mytouch 3g.
"if you want to be you, be you. If you want to be me, be me".
But other than that illusion people will say you get less lag.
I personally love sense ui and can deal with a slight bit of lag once in a while to keep sense ui.

Insight into the openness of android is what you gain!
If you don't like something about the OS, be it anywhere from a simple app to the entire interface, you can replace it
Buut.. you're probably looking for specifics on this phone, so:
1) Vanilla android. You get to see the interface that HTC felt they had to improve upon.
2) A chance to try out other home-screen managers like aHome and OpenHome
3) Some will say increased performance, and you certainly will. Personally this performance increase was outweighed by the usefulness of Sense and it's widgets.

I heard that SenseUI is so deeply ingrained that even if you shut it off it is still there. I believe that too because they HTC keyboard and other SenseUI stuff will still come up by default even with SenseUI disabled.
I noticed a slight speedup in the phone (placebo?) with it disabled but not enough to make me want to leave it disabled. I wonder if you can make it completely go away and if so how much faster would the phone really be at that point?

There are several HTC customizations throughout the software - the SenseUI everyone is familiar with is called 'Rosie' - this is the home screen replacement, just like aHome or OpenHome.
The other portions - such as contact integration, the camera and calendar apps, etc - are a bit more difficult to 'turn off', since they've been dropped in as replacements for the stock software.
The only way to truly get rid of HTC's customizations would be to root the phone and go with a stock-android ROM (which hasn't been packaged by anyone yet)

Nope. I'm running mine "Senseless" and kinda like it. It seems to be a little more stable and I still have access to most of the HTC replacement programs (music player, contacts with facebook, email etc.). Super easy to switch back and forth also.

Thanks. I don't have the phone yet. I am not eligible for my full $150 off until January, but with all the reading I am doing, I am tempted to buy it with just the $75 off. Decisions decisions....
