I had Ryan's One Click Lag Fix, which seemed to work well. Currently flashing my phone back to stock via Odin, grabbing the new update, and redoing it from scratch.. at which point I'll have to decide on a lag fix again. I've heard good things about Voodoo and Cognition - [ROM]Cognition | Voodoo Lagfix - HSUPA - Stock Lock Screen - xda-developers
The best and safest would be Voodoo... by itself (not bundled with other non-lagfix stuff).
But note that:
- its "uninstall" isn't really a true uninstall and leaves the custom kernel behind
- It makes your data partition ext4 which won't be recognized by some backup utils so you'll need to "uninstall" before backup/restore
- Other things might not play nice with it, such as OTA updates from AT&T/Samsung
- New bugs are occasionally found with it so you need to keep an eye on the forums.
