I transferred my apps from a note 3, and now have 12 pages of apps, in no discernable order! Can I make a folder, or at least arrange them alphabetically to make finding things easier? It's really putting me off keeping the phone

No app drawer does make things get messy fast but you can create folders on your home page. Just hold down on an app the drag it and place it on top of a related app. The folder will be created automatically. You could also download a launcher that has an app drawer built in use it intead of Huwaei's EMUI launcher. I use Nova Launcher on all my devices.
Seconded: install a decent launcher and you get back the app drawer and the ability to arrange everything as you like it.
