Root Stable Underclock?

What range of CPU mhz would be good to underclock the Mercury at?

Mainly when the screen is off.

So far, I've only used CPUBoost Lite. I've gotten the phone down to 614Mhz Max and down to 460Mhz Min with the screen off. I haven't gone any lower than this for fear of making the phone unstable.

Can anyone else post their settings, and at what speeds they begin to lose stability?

Lowering the Screen Off speeds isn't likely to make the phone unstable. If anything, it might just make it lag for a moment until it catches up when waking. I don't have a Mercury, but I have no problems from my Droid Inc with setting Min/Max to 245 in Screen Off profile, using SetCPU.
