Root Step by step guide

Do you know which ones are compatible with my device the LG Optimus Elite.

There are plenty of threads here containing all the information regarding CM and where the Optimus Elite stands with it. But, to sum it up, CyanogenMod does not have an official version of CM7 (which is Android 2.3.x, or Gingerbread, based, which is compatible with our phones) for our phones. Two devs are working together on porting it to (ie: taking the source code and adapting it to work with) our phones. It is not yet finished, but is coming. Until then, we have plenty of well-developed ROMs already available for this phone. This thread (http://androidforums.com/elite-all-things-root/620742-clockworkmod-optimus-elite-faq-guide.html) has everything you need with regard to CWM and a complete list of the available ROMs, if you don't know what CWM is nor how to install it and you don't know what ROMs we already have (of course, if you do have all of this knowledge, then you can omit this sentence). Also, the eventual goal is to get CM9 and CM10 working as well (which is possible).
 
Thsnks your the best I am considering trying the Sleipnir ROM but my phone is only rooted so Im not sure what to do next or how.to go about doing it. I am afraid to screw up cause the phone is new and so if it gets bricked I have no money for a new one. So will that thread walk me through what I need to do.

The "typical," for lack of a better word, bricking that most people have experienced (and this is usually the result of testing, say,CWM back when we were testing it before the RC) is fully undoable.

Head to the thread, make sure you're rooted (if you haven't, use giantpune's method for rooting via Poot, linked to in the guide), and install CWM using the guide, and then the ROM you want (also following the guide). You should be good. Do not ignore the prerequisites, however. Everything you need to know is in that guide.
