I'll reply to my own thread with my quick thoughts.
Top 6 general apps (five just wasn't enough):
Battery Status - I like to see how much battery I have as a percent, and this is a great app for that.
Dropbox - In addition to my Shift, I access my home PC, work PC, Macbook, and my wife's iPhone. This is a great way to share files across all platforms. Plus it kind of gives you an extra 2GB worth of (virtual) storage.
OI File Manager - This was suggested when I downloaded Dropbox, and it works great. I'm sure there are many others out there that do more, but for me this is simple and easy.
Pulse - What can I say, I loves me some RSS feeds, and this app is the best I've ever used.
Twidroyd - Pretty self explanatory. It works really well as my main Twitter client.
Barcode Scanner - QR codes, bar codes, it works for all of them. I've already used this many times to compare prices and read reviews of items.

EDIT: Honorable mention: Juice Defender (free). I can't say I totally undersdtand how this works, but so far it seems to save some battery life.
