Root Switching data servers

I don't know much about ip's and techy stuff like that, but I need to know.. Can I program my phone so that it connects solely to a specific data server? My speed test results showed a server running 1436 down and 600 up.. Can't I use the Ip info from the results and program the phone to only connect to those servers for better speed, and if so, how? A special tab in qpst? Or am I asking the nearly impossible?
 
SetDNS, its an app that changes the server of your phone. Download it, hit the settingss key, go into preferences, override 3G, then set a custom DNS. To undo it, just uncheck override 3G.
