The swype in gingerbread is version 2.25.x so it is a lot newer than the froyo version
Got the latest beta version working

Ended up doing a search for "swype" using root explorer. Deleted every instance of swype that came up.
There were two files with swype in their names, in each of the following folders:
data\app
data\data
data\dalvik-cache
After rebooting, swype was finally no longer available as a keyboard option. Installed the beta with no issues after that.
Now, the above solution is what i did after following the "normal" solution, which i have listed below.
**For those that didn't know, normally you can just delete:
\system\app\swype.apk
\system\lib\libSwypeCore.so
\data\dalvik-cache\system@app@Swype.apk@classes.dex
Reboot and install the latest beta swype. But that was in froyo.
Since GB comes with a much newer version, people who don't want to mess with all this can sit back and swype
Sorry if this is confusing as 'ell, jacked up on coffee, lol
