Sync email between phone and desktop

Having trouble syncing email, ( hotmail and exchange) between phone and desktop. I prefer to read emails on my Gallaxy s3 while away from my office and delete my phone inbox after reading the emails. However I DO NOT want them deleted from my desktop because I may want to answer them or file them into folders. How can I set my phone settind to accomplish this?

Hi, it depends which mail app you are using?
I use K9 Mail and it has the option to either delete from server when deleted on phone, or not to delete on server.
