Help Talking to / backing up to a Mac / network printing

I've pretty much read the manual and have a few questions. How easy is it going to be to back up everything including Apps to a Mac? I'm guessing data is relatively simple. (I am not a fan of the cloud.)

What about network printing? I'm pretty sure I'll be able to talk directly to my Epson colour printer via wifi or email address but what about other printers on my network?
