I typically see a "Sent: <time>" message underneath the text message when the message has been successfully transmitted in the display of my messaging app.
Now, I don't know that this actually means that the recipient has actually received it (I suspect not), but just that it's been transmitted out of your device to carrier who has accepted responsibility for sending it to the recipient.
Also, I have seen "Queued: <time>" and "Could not be sent" messages, too when there was a delay or issue in transmitting.
