Fours Llopis
This is the oven we used in Kansas. It's amazing! If I can budget enough to get one, it's definitely what I'd use. Problem is, they run about $60k! :eek:
But, they're a joy to use. Maintain heat amazingly well despite being wood-fired (indirectly).

They have a few different models and a range of sizes. I'd far prefer that style vs directly fired (or residual heat) ovens like the one we used in California. It's a PITA, difficult, not really stable. But... they're a whole lot cheaper to build.
 
What would it cost for a mason to build you a traditional brick oven? I'm sure there's be all kinds of hassles with permits and getting firewood, but I know there are several bakeries in Philly that use them ... both bread and pizza.
 
That's a big thing. With our pizza joint, it's very traditional (some say required) to use coal fired ovens to make New Haven style pizza. Whelp, our first place is in a brand new, street level high rise apartment building. Yeah, not gonna happen. :rolleyes:
I'm not forcing myself to go wood-fired, but if possible, I'd like to. There are plenty of joints in town that used wf ovens for pizza, and looking at potential small spaces, I would think it wouldn't be too hard for permitting (but knowing DC issues, who knows!).
Alan Scott, probably the most well known for oven building (RIP), has ovens all over the country and his plans are easy to acquire. But.... it can take considerable time and it's just not the style I'm aiming for.

Question: Why is it so friggin cold still!?! What happened to Spring?
Ugh, hopefully it'll keep the massive crowds for Cherry Blossom fest down though. :rolleyes:
 
hey pizza man :D i love beans and nuts, but can't have too much of it because it shoots my uric acid levels way up high *sigh*
 
Where my sister is studying culinary, they are having a mushroom festival. The truffle and mushroom pizza is just yummy :D
 
Could we get a cheap knock off spring from China?

Possibly... have you had a look at what they have in the way of off-brand spring on Alibaba or Made-in-China.com? I could always have a word with my friend at the Guangzhou Happy Spring Co., Ltd, but you might have to wait until fall due to back-orders.

Shouldn't be a problem either way, because you can have an Indian summer and a Chinese spring, two for the price of one.
