I was wondering why lots of apps (for me) say 'this app may not be optimized for your device', since they seem to work fine and normal. It seems like it says that for A LOT of apps for some reason... But why?

Probably the same issue you have with youtube. The screen resolution or something isn't set up right so apps don't know how to properly display and have to guess at the resolution.

It also said this a lot on my old Nexus 7, but now on this device it seems like it says it even more.

Count yourself lucky if you are getting a warning. I've had bad upgrades with At Bat and older OS. I do check on Play. It will say for Android 4 and up, and to me that includes 4.1, 4.2 and so on. It messes up the video.
 
Could just be that you are using a tablet. A lot of apps are written for phones and say something like that in their metadata, which I could imagine producing such a warning.
 
It's just a tablet thing. I checked on both my tablets (note 10.1 and Tab 4) and they both get the same warning for that app. A few phones that I tried didn't get the warning.
