Hi

I think what you are asking how to do is a factory reset of your tablet. This wipes everything off it and reinstates it to its "as new" condition with a fresh install of the OS and apps. ( It will not return it to "as new" if it has been rooted and has a custom Rom installed )

from the home screen

menu
settings
backup & reset
factory data reset

Note that this will delete everything from your device so back it all up first!

If you are asking how to root devices and install custom roms then its a complicated subject and the method differes for each different device. I suggest you research the method for the particular device you had in mind.

Hope this helps
