I think the contacts are saved via your Google account.....and as far as the other things(music and pics), I normally grab them from the SD card.
I'd also like to know if there is a one click solution to backing up everything.

You have your choice. You can back up your user data, apps and media to the cloud using Google's services or most manufacturers offer a PC sync suite. In most cases My Phone explorer is a much more efficient solution to backup and sync your phone.

There are back-up apps, but I don't remember their name. Other things such as contacts, calender, events,... are backed up on google.
