Is there a way to change the HTC Sense or Touchwiz messaging icon to the stock android messaging icon? I prefer the green stock messaging icon w/ the smiley face.

I don't think there is, unless you use a third party SMS app.

An App called Desktop VisualizeR will let you do it (and much more...) You'll just need to Google the icon and put it on your SD Card.
(Note: I'm not sure, but you may well lose the message count bubble that pops up on the icon when you have new messages if you do it this way.)
