So I've heard people that don't like TouchWiz and others that don't mind it.

Can someone give me the load down on it? Why don't you like it? Why do you like it?

Can't comment on NexusS or 4G sorry.
TWL though is quite buggy and slow with no customization at all. Ok you can change the wall paper and put what icons you want where you want but that's it.
I personally use ADW launcher and it's a lot smoother with far more adjustability and there are 100's of free themes for it like

Tron

Colour warp

Cyanogen

Matte curve

and of course the hidden dock bar is a great addition.

Actually, it is just a little slow. And not very much customization options.
Some people change it because they just want some change in their phones! That's what Android provides us: If you got bored or hated the app, find an alternative that does the same or better... Or maybe worse
