Should be possible, last I checked when I tried to compile for primoc like a year ago it was based on cm10 though, which we don't have sources for since we started on KitKat. Doesn't mean its not possible, just would take a lot of messing around with device trees.

I was looking into porting Ubuntu for our device, but was really hoping that we would get some other people willing to jump in the dev scene.

I have a linux machine and a github, honestly i just need to know how to set up the correct sources and repo info and i have the zv5 kernel and source code but like @whoshotjr2006 said the device tree work is over my head so I'm not sure what to do but i have space to at least give it my best try lol
