Undoing an update?

So I got a myTouch 3G on eBay, and I signed in to it using my existing GMail address (mind you, I have no data plan with T-Mobile, only a family plan, so I'm not sure how that worked). The phone came with the stock firmware (not sure what version it was). I connected to WiFi, and a notification came up on the phone indicating the availability of an update. So I accepted and installed the update, which brought my phone up to version 2.2.1.

The problem, as many might by now have heard of, is that the phone has worsened. Google sync does not work, email and gallery apps seems to be very slow, USB mass storage is not working correctly, etc. on my phone.

I'd really like to able to go back to the stock firmware (here is an example image of what it would look like; again, I've no clue of the version number). So how exactly would I go about doing that? Any assistance here would be appreciated.
