"Uninstalling" Apps

How do I uninstall apps and keep them off my phone? Also, is there a way to do this from the Market Place in the same manner that I could uncheck items that I did not want on my iPhone via itunes?

Are you talking about apps you downloaded from the market? If so, just open the market, press menu, my apps, click the app, press uninstall at the top. Basically just visit the app in the market and the install button is turned into an uninstall button. If you're talking about preloaded carriers apps, you will need root to remove them.
 
A much easier way is to download an app from the market with batch uninstall feature. Also, with go launcher, you can uninstall right from the app drawer with a long press.
 
For Downloaded Apps:

Menu / Settings / Applications / Manage Applications / Downloads / tap the app you want to uninstall and confirm

For System Apps and Preinstalled Bloatware:

Your phone has to be rooted. Use a utility like Titanium Backup.
