It's never a good idea to accept an OTA update when rooted... it can leave you with a lot of issues!
If you want to have stock GB, then you would have to unroot - I am not actually familiar with your phone, but I am sure that one of our members who have the Infuse 4G will be able to offer some advice
In all cases you need to be careful to read everything before starting. May not hurt to read the FAQ's on the xda Infuse forums.
Option 1 seems most recommended on XDA. It involves hooking phone to computer. I did successfully complete that after I had soft-bricked my phone. But it was not a smooth road.. ended up needing to ask a lot of questions and took about 3 days to get it to work. Seems like lots of others have problems as well but eventually get it to work.
Option 2 seems easier. Not as much interconnection with PC which seems to cause many of the problems in option 1 (usb port problems, driver problems etc). There was some mention of how to fix video afterwards... I didn't quite understand that part.
