Update 5.1.1 - To do it, or wait?

I am with T-mobile USA. Samsung Galaxy S5. Not rooted (and not going to). Currently running 4.4.2 KitKat.

Last month I accidentally hit Software Update, not knowing T-mobile had set up the roll out for the updates and my phone wants to do the 5.1.1. Lollipop update. I have been hearing nothing but complaints on this update (kind of like the Windows Vista era) and I was not planning on running the update until now.

I am seeing better things about the 6.0 Marshmallow update. Recently I see that T-mobile is in the process to getting the Marshmallow ready for the S5. I would eventually like to update my phone, but to something that isn't going to make my battery die quicker, glitch, overheat, etc. A friend accidentally updated a Nexus phone to the 5.0 Lollipop and it honestly screwed up her entire phone, forced her to buy a new one.

I am getting annoyed at the update processing every time I turn my Wifi on. The only way to stop that (that I found) is to go to the Software Update app itself and do "force stop", but once I turn my phone off for a little break, turn it back on, turn on Wifi, update starts to try and download again.

Should I just let it go? Download it? Everything seems to work fine on my phone now (well, everything but that Tsum Tsum game lol). Or, should I try to wait until Marshmallow comes out, which probably won't be until next year. If I should just leave the update out, does anyone know how to stop the update from starting automatically when I start wifi, until I click to update it myself?
