How do I update my Samsung Galaxy S?

If an update is available, go to Settings --> About Phone --> System Update and check for update.
If it says that your phone is up to date and no update is available, then the only way to put a more up-to-date operating system on your phone is to root it and install a custom ROM. There are many benefits to rooting, as well as inherent risks. You will want to ask a LOT of questions and read up on the rooting process' benefits vs. risks and determine if it's for you.
