Upgrading to ICS

Hi Newbie here from the UK.
Hopefully you can just help me to avoid any mistake with upgrading to ics.

At the moment I have a Galaxy Ace.
I'm looking to upgrade to a Galaxy S2 when my contract runs out in a week or two. Now the galaxy Ss at the moment comes with Gingerbread. I did try out the Xperia S - I loved the screen but have decided against it as I doin't like the sharp corners and it's a bit too thick. However the one I tried i think had the Ice Cream Sandwich operating system which i really liked - much better than what's on the S2.

So I'm thinking, as soon as I get the S2 I'd like to install ICS, which seems fairly straightforward using Samsung Kies.

Does that all sound reasonable so far?

Now as I understand it Samsung put their own customization (Touchwiz?) on the phone. When I upgrade to ICS does that get rid of Touchwiz? If so is there anything I'll regret losing?

Hope someone can help. Thanks
