using evernote free offline

I'm looking at note taking apps. I use my tablet offline often. Evernote has some great tools but there is no way I'm paying $45/yr for casual use.
Question is, do I just scrap Evernote? I don't really need the cloud services. I do like the "notebooks" organization as other note apps have not much in the way of customizable organization.
Another like but not need is the page capture with camera.
I don't want to use Evernote if all my notes just dissappear when I need them most (ie. No wifi).
So far, when I make a note, it is still there when I turn wifi off, but from what I'm reading, this is just the cache?
So far Colornote is my second choice.
Suggestions?

Google Keep works offline, is free, color codes, works with google Search on your homescreen (just say note "note"), has four kinds of notes (checklist, written, photo and voice) and will sync online at: drive.google.com/keep/

Thanks. Google Keep works great, but it doesn't organize notes. It's great to combine words & pictures, such as project notes with a photo of said project.
I'm test-driving Springpad, which looks too good to be true. I really don't need the cloud, but organize by categories is a must.
