So I'm currently running this rom: xda-developers.com/showthread.php?p=53219966 (Sorry, I'm not allowed to link yet.)

Before I installed that one, I had to flash the NDC bootloader and modem. Those wouldn't cause any issues with CM11, would they? Also, do I need to use CWM recovery, or would the PhilZ touch recovery (that I'm using now) work?

Edit: answered a lot of my own questions. Still don't know if the NDC bootloader/modem would be a problem.

Link errors for me. Anyways, You won't have issues with CM11 with the NDC bootloader and modem. Just the usual with any custom rom, remember to flash the apn fix. Philz is the way to go for our phone. People have had issues with other recoveries. Philz is just an advanced version of CWM that works flawlessly on the s3.

I just flashed the latest CM11 nightly last night with Philz and it worked perfectly for me :) A video on YouTube that used the same ROM said that you had to use a specific version of CWM (6.0.4.5 I think it was, I could be wrong) But if you are on Philz 6.00.8, it is based off the recovery they stated that you need to use. I don't know if the video was 100% accurate but I did it with no problem like I said.

Enjoy CM11! :) I've been getting some really good battery life out of it.

Oh! Like alexizawesome stated, don't forget to flash the APN fix.
