Help want to change dock icons

Newbie
I like the look of gingerbread but all I want to do is change the dock icons. Is there a way to do this without switching themes or something?

Like I said; hit applications button>settings button once in the app drawer>edit>hit ok on warning message>hold icon in dock to move.
 
Ahhh I get it I just wasn't going to applications. Ok then second correction. Can I use desktoo visualizer to create a icon that looks like the stock icon but runs handcent sms when opened and if so how can I turn off the stock sms so whenever I just notifications it goes straight to handcent

Open the SMS app and hit the settings button and then turn off notifications for that app. Then there should be a hand cent app in your drawer or long hold the home screen and at a shortcut or widget for it. Not sure, I don't use hand cent.
