I have apps (and their data) backed up with Titanium Backup, done a nandroid backup with System Recovery. I'm wanting to flash Liberty or Eclipse one, probably, I need to be on 2.3.5 for Eclipse though right? How do I go about getting to 2.3.5 if I want Eclipse, and then how do I actually flash the new rom(Liberty/Eclipse)?

Generally the links in the All Things Root Guide sticky point you to posts and threads that have instructions as well as download links. And lots of folks like Eclipse, but 2.3.5 gives me too many WiFi and Data problems to be worth it to me. But it is a nice ROM.
